Power Balls

Bite sized, energy packed snacks

Ingredients

  • 1 cup chickpea flour
  • 1 cup pitted dates
  • 2 Tbsp shredded unsweetened coconut
  • 1/4 cup water

Preparation

Pre-heat oven to 350°F.

Coarsely chop the dates. Combine chopped dates, chickpea flour, and water in food processor. Pulse until ingredients are incorporated but not smooth. Mixture should resemble slightly stiff cookie dough.

Line a baking sheet with parchment paper. Roll ping pong sized balls, coat them by rolling in shredded coconut and place on baking sheet. Cook for about 10 minutes, until tops are golden brown.

Store at room temperature for up to a week.

We experimented with our own power ball recipe when looking for snacks free of gluten, nuts, seeds, and added sugar. You can add any of these to the food processor to your liking. Protein powder also makes a good add in for even more flavour and nutrition.

They can be eaten as a grab-n-go breakfast, a midday snack, or even as a dessert treat!
