Watermelon and mozzarella salad

A refreshing summery alternative to traditional Caprese

Ingredients

  • 1 (8 ounce) ball fresh mozzarella cheese, sliced
  • 1/4 medium watermelon, cut into small slices
  • olive oil, for drizzling
  • handful of fresh basil, sliced into ribbons
  • salt and pepper

Preparation

Arrange alternating slices of mozzarella cheese and watermelon on a serving plate. Drizzle olive oil over the cheese and melon. Sprinkle the ribbons of basil across and season with salt and pepper to taste. Serve while still cool.

Perhaps nothing says summer like the first bites into a slice of juicy watermelon. In this take on a Caprese salad, a the softness of mozzarella cheese is an excellent compliment to the sweetness and crunchiness of the melon standing in for tomatoes. Fragrant basil adds even more summer to the mix, though virtually any fresh herb can stand in. Mint also works great for an added freshness. We recommend serving this as an appetizer prior to well-seasoned grilled meats, fish, or vegetables.
